Baked Chocolate Donuts with Pistachios

Sharing a donut recipe on a Monday is basically like saying “the diet starts tomorrow,” right?

Oh well.

The diet starts tomorrow. Because today, chocolate donuts with pistachios! I personally believe these donuts are way more important than any diet.


We survived the Kentucky Derby and Cinco de Mayo, and now it’s time to prep our Mother’s Day meals! So much to celebrate in May, and we’re just getting started.

If I took a wild and crazy guess – aka no guess at all – I could say the majority of moms everywhere have a weakness for chocolate. No objections? Didn’t think so.

Chocolate is the way to everyone’s heart, donuts are a beautiful breakfast/dessert hybrid, and crushed pistachios make anything that much better.

So how could we go wrong?

::whispers:: you can’t! You absolutely can’t go wrong.

While traditional fried donuts are (obviously) the way to really do it up, frying is messy and I really don’t trust myself at all around hot oil. Like, at all. I probably need a fire extinguisher close by.

Plus, we’re doing this for mom! And moms hate kitchen messes more than anything (mine especially does), so we’re opting for baked donuts. Easy to bake, easy to clean — two major wins when you’re cooking for the ones you love.

Baked donuts are so simple to make – it’s essentially like baking a cake — dry ingredients in one bowl, wet ingredients in another, wet ingredients get stirred into the dry ingredients bowl, and spoon out the mix into the donut pan! So simple.

And the result? A delicious cakey, double chocolately, pistachio-y mash up. Mom’s send this recipe to your kids as a subtle hint that you want to wake up to freshly-baked donuts Sunday morning.

Kids? Well, mom’s are worth far more than a batch of donuts, BUT I think this would be a good way to show your appreciation for them.

Baked Chocolate Donuts with Pistachios

Ingredients
  • 1 cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup granulated sugar
  • ½ cup buttermilk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ¼ cup unsalted pistachios, roughly chopped
For the glaze:
  • 1 cup confectioners sugar
  • ¼ cup unsweetened cocoa powder
  • 3-4 tablespoons milk
  • ½ teaspoon vanilla
Directions
  1. Preheat oven to 350 degrees F. Spray a donut pan with nonstick spray and set aside.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a separate mixing bowl, stir together the egg, sugar, buttermilk, melted butter, and vanilla until well combined. Add the wet ingredients to the bowl with the dry ingredients and mix until just combined (you don’t want to overmix!).
  4. Spoon the batter in donut holes, filling them about ⅔ of the way full. Bake 9-11 minutes, until a toothpick inserted inserted comes out clean.
  5. Let the donuts cool in the pan for about 5 minutes, then remove and let cool on a wire rack until completely cool.
  6. To make the glaze, whisk together the confectioners sugar, cocoa powder, vanilla, and 3 tablespoons of milk in a small bowl. If the glaze is too thick, slowly add in another tablespoon of milk until desired consistency.
  7. Dip the tops of the donuts in the glaze, then top with crushed pistachios.
